The farm-to-table movement is coming to Cypress Lounge & Wine Bar at the Westin Bellevue, as Westin Executive Chef Ivo Sandrea teams up with Sno-Valley Tilth and grower –producer Gård Vintners for a spring wine dinner on Saturday, June 8th, from 6:30 to 9:30 PM. After mastering cuisines from Hawaii, to New York, to his native Venezuela, the thriving farm to table environment in the northwest is one of the things that originally attracted Sandrea to the area.
The concept of the Cypress Farm-to-Table Wine Dinner is to source as many ingredients as possible for the dinner including vegetables, fruits, and herbs, as well as meats and seafood, through the farmers and producers associated with Sno-Valley Tilth. Members are organic and sustainable farmers of the Snoqualmie and Snohomish watersheds and community, as well as business members who support local, sustainable agriculture.
Six of the seven courses for the Farm –to-Table Dinner will be paired with Gård Vintners wines, from prolific winemaker Aryn Morell. Morell has earned high acclaim working with Matthews Estates and Tenor Wines who share him with Gård. Gård Vintners is a family-owned and operated winery. Gård, means “farm” in many of the Scandinavian languages, is a tribute to the farming tradition of the Lawrence family, founders of Gård Vintners, which has been as been in Washington’s Columbia Valley for over 45 years.
